    Vinification: Soft pressing, temperature-controlled fermentation in stainless steel tanks for 14/18 days
    Ageing: 10 months in used oak tonneaux oak barrels + 3 months in stainless steel tanks

  • After 44 years as the main winemaker for Gaja, back in 2014 Guido set up his own winery at his small family estate in Montestefano.
